'Le Gout C'est Tout - Taste is Everything' is the motto of Snowy Mountains cheesemaker, Mike Corbett. He is perhaps Australia's highest altitude cheesemaker and has always set the highest standards for his French goat's milk cheeses, both fresh and matured.
It all began in 1987 Mike Corbett went cycling in France and became hooked on goat cheese. Back in Australia he set up his own dairy herd of hardy Swiss Toggenburg and Saanen goats, which now numbers around sixty,
He began making fine cheeses such as fresh curd quark, waxed and fresh chevre, or ashed chevre. Others he coated with cracked pepper or Tasmanian mountain pepper, mixed them into the cheeses, or even put them into a marinade of olive oil and garlic, a la Provence.
Mike's lovely artisan cheeses are available in the local area, or from Essential Ingredient in Canberra and Dijon Foods in Sydney.
